The Tastemakers: Vegan Skagenröra From Good Eatings
Can you explain what skagenröra is and when you’d usually enjoy it?
Skagenröra is a summer classic that’s often served as a starter on top of white French bread, which we call Toast Skagen, similar to how I have served it in the video. It’s a decadent seafood salad traditionally made with shrimp and caviar, as well as the quintessential Swedish summer herb: dill. It is creamy, with mayonnaise and crème fraîche, infused with a fresh flavour from the lemon zest and juice, as well as salty from the seafood – or, in our case, the caviar made from sea vegetables.
What’s your golden tip when it comes to creating vegan versions of well-known dishes?
Focus on the seasoning and flavouring as well as the texture of the dish, because often those things are what we associate with different dishes. If we manage to get the seasoning and texture down, a mushroom can suddenly become steak, and tofu can replace shrimp. Traditional and vegan Toast Skagen
For 4 people as an appetizer or cocktail piece.
Preparation time: 20 min + 30 min for marinating
Traditional Toast Skagen
Oat buttons
g shrimp
g of mayonnaise
g of crème fraîche
juice of 1 lemon
1 small red onion
1 teaspoon Dijon mustard
tablespoons fresh dill
1/2 teaspoon salt
For decoration
Shrimp
Dill (fresh)
- Melt the shrimps as instructed.
- Chop the red onion into small cubes.
- Stir in mayonnaise, crème fraîche, lemon juice, chopped red onion, mustard, dill, salt and shrimps. Allow to marinate for at least half an hour. Spread on top of oatballs and garnish with shrimp and dill, for example.
Vegan Toast Skagen
Oat buttons
g piece of tofu, unflavoured
g of vegan mayonnaise
g oat fraiche (eg cheese gate)
1 lime
3 spring onions
1/4 teaspoon black pepper
1/4 teaspoon chili powder
teaspoons sugar
4 drops of Tabasco or to your liking
- Dry the tofu, for example, inside kitchen paper under a weight. Then cut into small cubes.
- Chop the spring onion. Grate the lime peel.
- Mix the tofu cubes, chopped spring onion, vegan mayonnaise, oat fraiche, lime juice and zest. Season with tabasco, sugar, chili powder and black pepper to taste

- g palsternacka
- 1 rödlök, liten
- 1 fänkål
- 1,5 msk citronjuice, färskpressad
- 2 dl majonnäs, vegansk
- 3 msk tångkaviar, blandade färger
- 0,5 dl färsk dill, hackad
- Salt och svartpeppar
- Olivolja
Övrigt
- Levainbröd, en limpa
- Olivolja, eller vegosmör (att steka i)
- 4 msk tångrom, röd eller svart
- Dillkvistar
